About The Team

Maura Baxter is the head chef at The Cornstore Limerick. A Cavan lady, she has worked with The Frawley Group for 7 years, helping to develop our food offering to a high level of excellence.

Discussing our food Maura comments, "When producing our menus we consider seasonality, availability and current trends. We now have Chateaubriand available to share, which allows customers to experience a top-quality dish a reasonable price. My favourite, free range pork belly, is slow roasted for 12 hours to ensure a great depth of flavour. We marry this with a creamy mash, roast root vegetables, apple sauce and cider jus to create an all round winter favourite. As a team of chefs we pride ourselves in the time and effort we spend on each individual dish."
